Pokatong, M.Sc., Ph.D., Dekan FaST Eric Jobiliong, Ph.D., <\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"color: #464646; font-size: 13px;\">Wakil Rektor Bidang Keuangan dan Administrasi Hana Herawaty<\/span><\/div>\n<\/td>\n<\/tr>\n<tr>\n<td>\n<div>&nbsp;<\/div>\n<div>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Persoalan pengolahan pangan menjadi perhatian Program Studi Teknologi Pangan Universitas Pelita Harapan (Foodtech-UPH) dalam ajang <strong>FOOD EXPLORE 10<\/strong> yang diadakan pada tanggal 1-3 November 2017.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">FOOD EXPLORE 10 mengangkat tema ?<em>Food Processing and Quality Enhancement<\/em>? yang bertujuan untuk mengedukasi masyarakat mengenai apa itu pengolahan pangan yang baik dan benar serta informasi peningkatan kualitas pangan yang dapat diperoleh dari pengolahan pangan yang baik dan benar. Hal ini bermanfaat agar persepsi masyarakat mengenai proses pengolahan pangan menjadi lebih baik lagi.&nbsp;<\/span><\/p>\n<p> &nbsp;<\/p><\/div>\n<\/td>\n<\/tr>\n<tr>\n<td>\n<div>&nbsp;<\/div>\n<div>\n<table style=\"height: 17px; width: 994px;\">\n<tbody>\n<tr>\n<td>&nbsp;<img decoding=\"async\" class=\" size-full wp-image-39\" src=\"https:\/\/www.uph.edu\/wp-content\/uploads\/2017\/11\/images_IMG_4279-1.jpg\" alt=\"IMG_4279.jpg\" width=\"375\" height=\"280\" \/><\/td>\n<td>&nbsp; <\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Menurut Reinald Febryanto Pengalila, ketua panitia Food Explore 10, &nbsp;masih banyak masyarakat yang memiliki pemahaman keliru seputar pengolahan pangan. Ia mencontohkan mengenai <em>edible coating <\/em>yang diaplikasikan pada buah untuk memperlambat proses pemasakkan dan pencoklatan buah, yang cenderung dianggap berbahaya.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">?Kebanyakan masyarakat masih memandang <em>edible coating<\/em> merupakan pelapisan dengan penggunaan lilin atau plastik. Padahal edible coating adalah suatu proses yang dapat mempertahankan <em>self-life<\/em> dari makanan tersebut, sehingga <em>self-life<\/em> nya menjadi lebih panjang dan tidak berbahaya. Karena bahannya sendiri aman, yang biasa terbuat dari selulosa yang sering dipakai dalam industry pangan serta bahan sebagai <em>anti-microbial<\/em>,? ujar Reinald.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Padahal proses tersebut merupakan bagian dari pengolahan pangan. Ini dilakukan dengan tujuan tertentu, seperti untuk mempertahankan nutrisi, daya tahan buah untuk jangka waktu tertentu, dan sebagainya. Namun tidak dapat dipungkiri tidak semua proses pengolahan pangan dilakukan dengan baik dan benar. Sementara pengolahan pangan yang tidak benar ternyata dapat berdampak buruk bahkan membahayakan kesehatan manusia.<\/span><\/p>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<div>&nbsp;<\/div>\n<\/p><\/div>\n<\/td>\n<\/tr>\n<tr>\n<td>\n<div>&nbsp;<\/div>\n<div>&nbsp;<\/div>\n<div>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Dalam kesempatan pembukaan acara FOOD EXPLORE 10, Dekan Fakultas Sains dan Teknologi (FAST) UPH, Eric Jobiliong Ph.D., juga memprihatinkan kurangnya kesadaran masayarakat terhadap persoalan ini. Menurutnya banyak makanan yang kita konsumsi &nbsp;sehari-hari merupakan makanan yang telah diolah (diproses). Namun seringkali kita terlewat untuk memperhatikan kualitas makanan olahan yang kita konsumsi. Karena itu melalui ajang FOOD EXPLORE ia berharap dapat memberikan dampak positif kepada masyarakan di lingkungan UPH dan masyarakat luas, dalam hal pengolahan pangan yang baik dan penar, agar dapat meningkatkan kualitas pangan.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Sementara ketua Prodi Foodtech UPH, <span style=\"color: #222222; background-image: initial; background-position: initial; background-repeat: initial; background-attachment: initial;\">Ir.Wilbur Donald R. Pokatong, M.Sc., Ph.D., dalam kesempatan tersebut menyinggung peran aktif Prodi Foodtech dalam menghasilkan produk pangan berkualitas.<\/span><\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%; color: #222222; background-image: initial; background-position: initial; background-repeat: initial; background-attachment: initial;\">?Tema ?Food Processing and Quality Enhancement? sudah sangat tepat dan penting dalam proses penjaminan mutu pangan untuk menghasilkan produk pangan termasuk kemungkinan meningkatkan kualitas produk. Diharapkan melalui kegiatan FOOD EXPLORE ini dapat menepis pendapat keliru dari konsumen bahwa pengolahan pangan akan menghasilkan produk yang tidak baik untuk kesehatan,? jelas Donald.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Donald menambahkan bahwa negara Indonesia adalah negara agraris dengan sumber pangan yang sangat besar dan perkembangan teknologi pangan ke depan akan terus berkembang, sehingga teknologi pangan akan selalu ada dan eksis. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Ada banyak kegiatan yang dihadirkan pada acara ini, di antaranya sekitar pameran 19 inovasi pangan 19 karya mahasiswa Foodtech di ?Rumah Inovasi?, kompetisi debat pangan, Kompetisi inovasi bersyarat tingkat SMA, National foodpreneur competition yang diikuti perguruan tinggi dari berbagai daerah, dan talk show.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Kegiatan ini juga turut mengundang mitra industri seperti Orang Tua group, Nutrifood dan Indofood. Donald sendiri berharap inovasi-inovasi karya mahasiswa Foodtech ada yang dapat diadopsi ke industri untuk dikembangkan lebih lanjut. Sebab dari setiap Food Explore yang diadakan selalu ada pangan baru yang menarik.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Salah satu contohnya Jesica Vanlen dari Teknik Pangan angkatan 2015, yang membuat inovasi makanan yang ?Lynca? yang terbuat dari sari buah leunca yang ditambahkan dengan jeruk nipis dan disajikan dengan air rebusan gula untuk meminimalisir rasa pahit dari buah leunca itu sendiri. Alasan dari Vanlen membuat produk ini adalah agar masyarakat semakin lebih mengenal buah leunca serta agar mendapat manfaat berupa antioksidan yang tinggi.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Tak kalah menarik, karya yang dihasilkan Nabillah Chanan Din, mahasiswa jurusan Food Tech semester 7 Internasional Class, membuat ?Pho Chips?. Makanan ini merupakan kerupuk fortifikasi kalsium yang sarat dengan kalsium terbuat dari okra dan daun pohpohan. Berbekal pengamatan terhadap masyarakat Indonesia yang menyukai krupuk, namun nutrisi yang terkandung pada krupuk masih dirasa sangat kurang. Nabillah membuat produk krupuk ini dengan kandungan kalsium dengan jumlah tinggi yang berasal adri okra dan pohpohan.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">?Ini ditujukan khususnya pada anak ?anak, karena mereka biasa tidak mau minum susu malah lebih suka makan snack yang tidak bergizi. Jadi saya membuat produk yang sarat dengan kalsium ini?, ujarnya.<\/span><\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 10pt; line-height: 115%;\">Rumah inovasi ini menjadi pusat dari seluruh kegiatan FOOD EXPLORE 10 yang dapat dikunjungi publik sekaligus mencicipi aneka inovasi pangan dan mendapatkan informasi manfaat produk secara Cuma-Cuma.
