Menjawab kebutuhan tersebut<strong>, Fakultas <em>Hospitality <\/em>dan Pariwisata Universitas Pelita Harapan (FHospar UPH)<\/strong> menghadirkan pembelajaran bertaraf internasional melalui <em>workshop<\/em> kuliner dan seminar <em>hospitality<\/em> bersama praktisi dari Swiss. Kegiatan yang berlangsung pada 9 Maret 2025 di Kampus UPH Lippo Village, Tangerang ini diikuti oleh para mahasiswa Program Studi Pengelolaan Perhotelan angkatan 2023 hingga 2025.<\/p>\n\n\n\n<p>Program ini dapat terselenggara melalui kerja sama dengan <strong>Swiss Education Group (SEG),<\/strong> jaringan pendidikan <em>hospitality <\/em>swasta terbesar di Swiss yang menaungi institusi ternama seperti Swiss Hotel Management School (SHMS), C\u00e9sar Ritz Colleges Switzerland, Hotel Institute Montreux (HIM) Business School, dan Culinary Arts Academy Switzerland (CAAS). Institusi tersebut dikenal luas dalam pendidikan <em>hospitality<\/em> global dan secara konsisten menempati peringkat Top 10 dunia dalam QS World University Rankings untuk kategori <em>Hospitality &amp; Leisure Management<\/em>.<\/p>\n\n\n\n<p>Dalam sambutannya, Prof. Dr. Diena Mutiara Lemy, A.Par., M.M., CHE. selaku Dekan FHospar UPH, menyoroti perkembangan teknologi, termasuk kecerdasan buatan <em>(Artificial Intelligence\/AI) <\/em>yang mulai memengaruhi sektor <em>hospitality<\/em> dan pariwisata. Meski demikian, ia menegaskan bahwa peran manusia tetap menjadi elemen utama dalam industri pelayanan.<\/p>\n\n\n\n<p>\u201cDengan kemajuan teknologi ini, peran manusia tetap penting. Biarkan AI mengerjakan pekerjaan yang bersifat rutin, sementara manusia berperan dalam pekerjaan yang lebih menantang dan membutuhkan sentuhan kemanusiaan. Melalui kegiatan ini, kami berharap wawasan internasional mahasiswa semakin terbuka sekaligus mempersiapkan mereka untuk memasuki dunia industri,\u201d ujarnya.<\/p>\n\n\n\n<p><strong>Dr. Amelda Pramezwary, A. Par., M.M., CHE.,<\/strong> Ketua Prodi Pengelolaan Perhotelan UPH menambahkan bahwa kerja sama antara UPH dan SEG yang terjalin sejak 2023 membuka peluang bagi mahasiswa untuk mengenal lebih dekat sistem pendidikan <em>hospitality<\/em> di Swiss.<\/p>\n\n\n\n<p>\u201cPendidikan <em>hospitality<\/em> berakar kuat di Swiss sejak industri perhotelan berkembang di sana. Melalui kerja sama dengan SEG, mahasiswa dapat belajar dari pengajar berpengalaman dari berbagai negara sekaligus memahami bagaimana standar industri <em>hospitality<\/em> diterapkan secara global,\u201d jelasnya.<\/p>\n\n\n\n<p><strong>Menyelami Kuliner Swiss dari Chef Berpengalaman Internasional<\/strong><\/p>\n\n\n\n<p>Kegiatan diawali dengan <em>Cooking Workshop<\/em> yang dipandu oleh <strong>Alexandre Morado<\/strong>, <em>Traveling Chef Ambassador<\/em> dari CAAS<em>. <\/em>Pria yang akrab disapa <em>Chef<\/em> Alex ini memiliki pengalaman bekerja di sejumlah restoran berbintang <em>Michelin <\/em>atau penghargaan tertinggi di dunia kuliner; seperti Disfrutar di Spanyol, Osteria Francescana di Italia, serta The Yeatman dan Ocean di Portugal. Ia juga pernah menjabat sebagai <em>sous chef<\/em> di hotel bintang lima Algarve Marriott Salgados Golf Resort &amp; Spa di Portugal.<\/p>\n\n\n\n<p><em>Workshop<\/em> berlangsung di fasilitas unggulan FHospar, yaitu <em>Salt &amp; Light Kitchen Lab<\/em>. Dalam sesi ini, <em>Chef <\/em>Alex mendemonstrasikan pembuatan <em>R\u00f6sti<\/em>, hidangan tradisional khas Swiss berbahan dasar kentang. Melalui demonstrasi tersebut, mahasiswa mempelajari teknik dasar memasak, mulai dari pemilihan bahan hingga metode memasak yang tepat.<\/p>\n\n\n\n<p>\u201cHal paling penting bagi seorang <em>chef<\/em> adalah menguasai dasar memasak terlebih dahulu, seperti teknik memotong, metode memasak, serta kemampuan mengatur waktu dan tekanan di dapur. Namun jika ingin melangkah lebih jauh, seorang <em>chef <\/em>juga perlu memahami aspek bisnis, mulai dari akuntansi hingga cara melayani pelanggan dengan baik,\u201d kata <em>Chef<\/em> Alex.<\/p>\n\n\n\n<p><strong>Ciptakan Pengalaman Berkesan melalui Strategi <em>Upselling<\/em><\/strong><\/p>\n\n\n\n<p>Selain workshop, mahasiswa juga mengikuti sesi seminar yang berlangsung di Auditorium Gedung D, Lantai 5, Ruang D503. Pada sesi ini, peserta mendapatkan wawasan dari Patrick Taffin d&#8217;Heursel, Dekan SHMS. Patrick merupakan profesional di bidang perhotelan dan spa dengan pengalaman internasional lebih dari 30 tahun. Ia pernah memegang berbagai posisi kepemimpinan di perusahaan seperti TGI Friday&#8217;s dan Disneyland Paris, serta di properti mewah seperti Relais &amp; Ch\u00e2teaux di Polinesia Prancis dan Sharq Village &amp; Spa, Ritz-Carlton.<\/p>\n\n\n\n<p>Melalui materi <em>Introduction to Hospitality &amp; the Notion of Upselling<\/em>, Patrick menjelaskan bahwa industri hospitality tidak hanya menawarkan produk, tetapi juga pengalaman bagi tamu. Ia menekankan pentingnya strategi <em>upselling<\/em>, yaitu menawarkan layanan yang lebih baik kepada tamu secara relevan dan tidak memaksa.<\/p>\n\n\n\n<p>\u201cUpselling bukan sekadar meningkatkan pendapatan hotel. Ketika dilakukan dengan tepat, semua pihak akan diuntungkan. Hotel memperoleh pemasukan tambahan, karyawan mendapatkan apresiasi, dan tamu memperoleh pengalaman yang lebih baik dari yang mereka bayangkan sebelumnya. Itulah inti dari <em>hospitality<\/em>,\u201d jelasnya.<\/p>\n\n\n\n<p>Kehadiran pembicara dengan perspektif internasional memberikan kesan mendalam bagi para mahasiswa. Salah satunya dirasakan oleh <strong>Ryu Kristiawan<\/strong>, mahasiswa Prodi Pengelolaan Perhotelan UPH angkatan 2023.<\/p>\n\n\n\n<p>\u201cKegiatan seperti ini tentu sangat bermanfaat, terutama bagi saya yang belajar di bidang <em>hospitality.<\/em> Saya jadi lebih memahami bagaimana cara mengembangkan dan menawarkan produk serta layanan kepada tamu,\u201d ungkap Ryu.<\/p>\n\n\n\n<p>Melalui kegiatan ini, mahasiswa memperoleh wawasan tentang praktik industri <em>hospitality <\/em>global sekaligus memahami standar profesional yang diterapkan dalam industri perhotelan dan kuliner di tingkat internasional. Pengalaman belajar langsung dari praktisi dunia ini menjadi bagian dari komitmen FHospar UPH dalam menghadirkan pendidikan yang relevan dengan kebutuhan industri.
